Crockpot Cookin' Week

Yeah, that's right. I dragged out the good ol' crockpot the other day and have been using it a lot more. My husband is usually the one that uses it. He makes chili for himself (the rest of us don't like it very much). A friend of mine lent me this book and I went through and picked out some recipes to try. I decided that this week I will use the crockpot all week. My kids are pretty picky about what they eat so I picked some simple recipes that weren't too fancy.

Sunday night I made Easy Mushroom Chicken with a side of mashed potatoes. It was pretty good and Avery ate a lot of it. She loves mushrooms. Camryn has been going through a super picky stage and hasn't really even been eating dinner most nights. Not sure what that's about.

Here is the recipe:

Easy Mushroom Chicken

4-6 Chicken legs and thighs, skinned (I actually just used chicken tenderloins instead)
Salt & Pepper
1/2 Cup Chicken Broth
1 Can of Cream of Mushroom soup
4 oz. Can of sliced mushrooms, drained (I used an 8 oz because of the mushroom lovers here)

1. Sprinkle salt and pepper on each piece of chicken
2. In small bowl, mix broth and soup together. Pour over chicken
3. Spoon mushrooms over top
4. Cover, cook on Low 6-8 hrs or High 3-4 hrs

Monday night we had Venison Stroganoff over Egg Noodles. My husband is a hunter. Deer season is his favorite time of the year. He is a bow hunter and has gotten 3 deer this year so far. Our outside freezer is stocked with Venison for the winter. So I am always looking for recipes for Venison. 3/4 of us liked this recipe a lot too.

Venison Stroganoff

1 lb Venison (I used Venison burger, it's just like ground beef)
1/2 cup chopped onion
1 can Cream of Celery Soup
1/4 tsp Garlic Salt
4 oz. can mushroom pieces, drained (I used an 8 oz can)
1 cup Sour Cream*

1. Brown meat, add onions
2. Combine meat, onions, soup, garlic salt and mushrooms in crockpot
3. Cook on Low 6-8 hrs
4. 15 mins before serving, stir in sour cream

* The next time I make this I will probably use a little less sour cream. I like sour cream but I could really taste it and I think a little less will still taste fine.

Tonight we are going to have Sweet N' Sour Chicken with Rice. I'll be sure to post the recipe after we try it and how we all liked it.
